Our Process

Black olives being washed by a specialized machine

Naturally-cured olives—made without the use of lye or other chemicals—are the most popular and common olives throughout Jordan and the Middle East. Years of innovating and refining this traditional curing technique have made these olives our expertise; we place fresh, hand-picked olives in a mixture of just water and salt, then let nature take over the rest. Olives retain their full flavor profile and firm, crispy texture which would be lost during lye-curing. Expertly curing olives with this time-honored method has been and still remains our foundation. In addition to the naturally-cured olive product selections, we offer the conventional Spanish-style olives, Kalamata-style olives, hand-crafted stuffed olives, and a collection of artisanal Jordanian foods.

Jarrar Group Imports holds all its sources, farms, factories, and products to the highest quality, ethical, and safety standards. Long-established and trusted relationships support local Jordanian farmers and are our source for only superb olives. Within hours of being harvested by hand, the olives are delivered to our facilities, sized, and begin curing. Once finished, they are thoroughly cleaned and then undergo strict quality assurance inspection for defects, overseen by experienced food engineers. For our stuffed product lines, we pride ourselves and workers on manually stuffing each and every olive. Only after ensuring the products meet our standards are they packed and shipped to customers.

The manufacturing facility creates customized orders for clients throughout the Middle East and North Africa. On a monthly basis, the factory receives many different requests for custom products from our clients. A team of dedicated experts works with customers to develop unique recipes and source the necessary ingredients. These range from simple changes in the brine formula to brand-new foods never made before by the factory. Our trained specialists tackle each of these challenges quickly and efficiently, exceeding customer expectations every time.
